500 gr. Fettuccine
25 gr. Butter
300 gr. Small fresh spinach leaves, washed and dried
2 medium sweet potatoes
1 Tbs olive oil
250 ml cream
2-3 Tbs lemon juice
Grated rind of one lemon
1.Peal sweet potatos, cut into small cubes and pile on top of tin foil. Add 1Tbs olive oil, salt and paper and mix well. Fold the foil like a bag. Place in 200c heated oven and bake for 20-25 minutes.
2. Cook Fettuccine in boiling water according to manufacturer instructions till El-Dante
3.Melt butter In a pot, then add the spinach leaves and cook until they change color and lose most of their volume
4. Add to spinach the lemon juice, lemon rind and cream
5. Add cooked sweet potatoes, salt and paper
6. Pile on top of hot Fettuccine and serve.
