It is so hot! I do not feel like cooking…
Cold Cucumber Gaspacho is the answer for such days and it is so easy to make!
6 cucumber cut into cubes
2 green papers cut into cubes
1 cm green hot paper chopped very small
1/3 cup chopped coriander
1/3 cup olive oil
3 Tbs white viniger
50 gr. Feta crumbled
Blend all the ingredients in a food processor until smooth.
Refrigerate for at least one hour before serving. Pour on to nice glassed and place crumbled feta on top.
