Food – Cold Cucumber Gaspacho for hot summer days

It is so hot! I do not feel like cooking…

Cold Cucumber Gaspacho is the answer for such days  and  it is  so easy to make!

Cucumber Gazpacho 

6 cucumber cut into cubes

2 green papers cut into cubes

1 cm green hot paper chopped very small

1/3 cup chopped coriander

1/3 cup olive oil

3 Tbs white viniger

Salt/ paper

To decorate;

50 gr. Feta crumbled

Blend all the ingredients in a food processor until smooth.

Refrigerate for at least one hour before serving. Pour on to nice glassed and place crumbled feta on top.

  2. That looks delicius – unfortunately the wether i Denmark (where i live) is not hot… actually it’s kind of cold for summer – but i think i’ll try your Gazpacho anyway 🙂
    I like the idea with your blog… fashion for 40’s and 50’s – i’m almost 42 and in Denmart i think we’re quite good at dress our age, but there are only a few bloggers over 35 years. (At least what i can find)
