I love Friday night mealtime in our family. It is the one meal during the week that everyone in the family wants to participate. Friday night meal is the occasion for each member of the family to share, if they wish, their experiences and activities of the week. With the assured attention of all the family, it is always the time to laugh and cry together and enjoy the common support.
I usually do the cooking in the afternoon and the children set the table in the garden. We often invite guests, usually other family members.
Most of my cooking experiments are done for Friday night meals. As all the members in the family love food and eating, they are always eager to try my new concoction, although I have to admit there are times the new recipe turns out a disaster, flipped straight to the dustbin. On such occasions , the family praises portion control :a starter, salad and deserts ( and always a good laugh!)
For the main course tonight I am preparing Chicken & Turkey balls in tomato sauce, but do not worry, I have made it many times before and it was always juicy and a great success.
Chicken and Turkey ball in tomato sauce
For the balls:
400 gr. each minced chicken and turkey, mixed together
8 Tbs bread crumbs
1 tsp yellow mustard/or 1 Tbs tomato paste
1 grated carrot
1 grated zucchini, squeezed of all juices
A hand full of fresh greens – parsley, coriander etc. finely chopped
For the Tomato sauce:
6 tomatoes, chopped
2 onions, chopped
2 cm of fresh green hot pepper, diced
A little olive oil
2 cloves garlic
3 Tbs tomato paste
3 cups of boiling water
Salt, Pepper, Baharat (A mixture of spices, usually includes – Nutmeg, Cinnamon, Turmeric, Cumin)
Mix all the balls ingredients to a convenient working pulp (If it is too moist, add a little more bread crumbs). Leave aside.
Make the tomato sauce: In a wide pot, fry the onions in a little oil until transparent. Add minced garlic and fry for two more minutes.
Add chopped tomatoes and diced hot paper. Cover the pot and let simmer for a few minutes. Add Salt, Paper, Baharat and the tomato paste mixed with the boiling water.
Let it cook until all vegetables integrated into a nice sauce.
Wet your hands and form small balls of the chicken and turkey mixture (or an elongated shape – see the pictures) . Drop it into the simmering tomato-sauce pot. Continue forming balls and arranging them in the pot while on the cooker. (It is also possible to fry the balls first to get a brown crispy exterior and only then drop them into the sauce. I prefer to save on calories and skip this part altogether.) The balls must be totally covered with the sauce. Once all your mixture is made into balls and they are in your pot, bring to boil again, reduce heat and cover.
Let it cook for 50 minutes turning the balls gently with a spoon, once.
Serve with white rice and green salad.
